Sausage & Peppers
Grandma Moe's Original Recipe
Ingredients
- 5 mild Italian sausage
- 4 hot Italian sausage
- 4 Sicilian sausage
- 4 green peppers
- 3 red peppers
- 3 yellow and/or orange peppers
- 2 medium-sized onions
- olive oil
- parsley, oregano, and red pepper (to taste)
- salt and pepper (to taste)
- large, deep baking tin
Directions
- Slice peppers and onions into 1/4 to 1/2 inch strips
- Place peppers and onions into baking tin
- Sprinkle with salt, pepper, parsley, oregano, and red pepper
- Add olive oil and mix (peppers should be lubricated, but not too oily)
- Place in oven at 350 degrees and cook for 30 to 45 minutes until
slightly soft
- Check peppers and onions every 10 minutes; add oil if burning
- Bring pan of water to boil (water should be 1/2 sausage-width deep)
- Lower flame to medium and cook sausage fully (about 16 minutes)
- Turn sausage regularly and poke with fork
- Slice sausage diagonally into bit sized chunks (but not too small)
- Add sausage to peppers and onions and bake for 10 minutes at 350 degrees
