Rice Pudding
Grandma Moe's Original Recipe
Ingredients
- 1/2 cup rice (Uncle Ben's)
- 1/2 cup water
- 1/2 teaspoon salt
- 2 3/4 cup milk
- 3 tablespoons butter
- 2 eggs
- 3/4 cup sugar
- 1/2 tablespoon vanilla
- cinnamon
Directions
- Combine rice, water, and salt and bring to a boil
- Reduce heat and cover, cooking until liquid is absorbed (about 9
minutes)
- Stir in 2 1/2 cup milk
- Cover and cook on low flame for 1 hour
- Add butter
- Combine eggs, sugar, and remaining milk in a separate bowl
- Stir in a little rice mixture and mix
- Add new mixture to original mixture
- Add vanilla
- Cook entire mixture on low flame, stirring constantly, until thickened
- Transfer pudding to a deep serving dish
- Sprinkle cinnamon on top
