Stuffed Artichokes
Grandma Moe's Original Recipe
Ingredients
- artichoke
- breadcrumb topping (see Baked Clams)
- olive oil
Artichokes
- Cut off tips of leaves (about 3/4 inch from top)
- Rinse in cold water
- Put upside down on a table and squeeze downward (leaves open)
- Stuff breadcrumb topping into all leaves
- Put in pan or pot
- Add water (about 1 1/2 inches high)
- Sprinkle with oil, cover, and steam
- As soon as water boils, lower flame and simmer for 20 to 25 minutes
- Make sure there is always water in the pan
